Key Responsibilities:
- Craft Cocktails and Beverage Program Development:
- Design and execute an innovative cocktail menu that balances Japanese flavors, ingredients, and techniques with modern mixology.
- Ensure the cocktail offerings complement the sushi menu, working closely with the Head Chef to create harmonious pairings.
- Incorporate theatrics and creativity into drink presentations, delivering an unforgettable visual experience for guests.
- Sake and Japanese Spirit Expertise:
- Curate an extensive sake selection, offering a range of styles (junmai, ginjo, daiginjo) and flavors that enhance the dining experience.
- Guide guests through sake offerings, providing thoughtful recommendations and pairing suggestions to complement their meal.
- Maintain a deep knowledge of Japanese whisky, shochu, umeshu, and other spirits, crafting unique cocktails that showcase these ingredients.
- Drink Theatrics and Presentation:
- Incorporate dramatic flair into drink service, utilizing techniques such as smoke infusions, ice carving, or table-side cocktail preparation.
- Elevate the guest experience by adding interactive or visually engaging elements to cocktails, making each drink a memorable event.
- Stay informed of global bar trends and continuously innovate with new techniques to keep the beverage program cutting-edge.
- Guest Engagement and Service:
- Interact with guests at the bar and tables, offering personalized recommendations based on their preferences and the dishes they order.
- Provide exceptional service, ensuring each guest feels welcomed, informed, and satisfied with their beverage selections.
- Host occasional sake tastings, cocktail demonstrations, or special events to educate and engage guests on Japanese beverages.
- Team Leadership and Training:
- Lead the bar team, providing training on cocktail creation, sake knowledge, Japanese spirits, and the art of drink presentation.
- Ensure all bartenders are knowledgeable about the menu, capable of executing drink theatrics, and providing high-level service.
- Manage bar staffing, ensuring the bar is efficiently run during peak service hours while maintaining high service standards.
- Inventory and Cost Management:
- Manage bar inventory, ensuring that all necessary ingredients and supplies are stocked while minimizing waste.
- Maintain accurate records of alcohol sales, monitor stock levels, and order inventory as needed.
- Assist in controlling beverage costs by ensuring efficient use of ingredients and minimizing loss.
- Collaboration with Kitchen and Management:
- Work closely with the Head Chef and management team to develop seasonal beverage pairings and special event offerings.
- Collaborate on unique food and drink pairings, particularly for omakase experiences or tasting menus, ensuring that each pairing enhances the overall dining experience.
- Regularly update management on bar performance, customer preferences, and potential areas for menu enhancement.
- Bar Cleanliness and Compliance:
- Ensure that the bar area is impeccably clean and organized at all times, maintaining the high-end atmosphere of the restaurant.
- Adhere to all health, safety, and liquor regulations, ensuring compliance with local laws and industry standards.
- Conduct regular cleaning and maintenance of bar equipment, ensuring all tools and glassware are in perfect condition.
- Customer Experience and Feedback:
- Engage with regular guests and develop relationships to ensure they have a personalized and memorable experience each time they visit.
- Actively seek feedback on new cocktails, sake pairings, and service, using guest input to continually refine the beverage program.
- Event and Special Occasion Planning:
- Assist in planning and executing bar-centric events, such as sake-pairing dinners, cocktail masterclasses, and private tastings.
- Design exclusive drinks or sake pairings for special events, private dining experiences, or VIP guests.
Qualifications:
- 3+ years of experience as a bartender in a fine dining or high-end bar setting, with experience in Japanese cuisine preferred.
- Extensive knowledge of sake, Japanese whisky, and spirits, with strong cocktail crafting skills.
- Proven ability to execute drink theatrics and deliver visually stunning and creative cocktails.
- Strong leadership skills and experience managing a bar team.
- Excellent communication and guest engagement skills.
- Ability to work under pressure in a fast-paced environment while maintaining composure and professionalism.
- Flexibility to work evenings, weekends, and holidays.
Working Conditions: This position requires standing for long periods in a high-pressure, fine dining environment. The Lead Bartender must be able to work evenings, weekends, and holidays, as required by the restaurant's peak service hours.
